Preparation Instructions

  1. Soak the Dosa Batter: Wash the rice and urad dal separately. Soak them in water for at least 4 hours. Grind the soaked rice, urad dal, and fenugreek seeds into a smooth batter. Add salt and water to adjust the consistency.
  2. Prepare the Masala Filling: Heat oil in a pan. Add cumin seeds, let them splutter, then add chopped onion and green chili. Sauté until the onion turns golden brown. Add mashed potatoes, coriander powder, turmeric powder, garam masala, and salt. Mix well and cook for a few minutes.
  3. Make the Dosa: Heat a tawa (griddle) over medium heat. Pour a ladleful of batter onto the tawa and spread it into a thin, circular shape. Cook until the edges turn golden brown and the dosa is cooked through.
  4. Fill the Dosa: Place a spoonful of masala filling in the center of the dosa. Fold the dosa in half and serve hot with sambar and coconut chutney.
